Description

Bottled in 1988 and aged as koshu at Okunomatsu Sake Brewery in Nihonmatsu, Fukushima, this tokubetsu junmai has been maturing for several decades at the foot of Mt. Adatara. Extended aging transforms junmai sake through oxidative and reductive processes, developing deep amber color, caramel complexity, and concentrated umami.
