The 2009BY vintage of Mizuho Junmai Daiginjo from Fukumitsuya reflects over 15 years of careful aging in Kanazawa. Yamada Nishiki polished to 40% softens into honeyed, toffee-like richness while retaining the clean Hakusan water minerality that defines the Mizuho line.
