Mizuho Junmai Daiginjo 2007BY is a long-matured vintage from Fukumitsuya, where Yamada Nishiki polished to 40% has developed warm, complex flavors over more than 15 years of cellar aging. It belongs to the brewery's most prestigious aged sake program rooted in Kanazawa.
