Hiroshima's soft water, contrasting with the harder water of regions like Nada, encourages a brewing style characterized by mellow sweetness and refined elegance. At the daiginjo level, the rice is polished to below 50%, and the result is a delicate, aromatic sake with floral and fruity notes.
