Kimbo Junmai Ginjo is a flagship expression from Kimpo Shuzo in Shimane Prefecture, brewed without added alcohol and with rice polished to at least 60% remaining to achieve the ginjo standard. Shimane's soft water, drawn from the mountainous hinterland of the San'in region, contributes to the gentle mouthfeel and clean finish of this sake. The ginjo fermentation process is conducted at low temperatures to develop the delicate floral and fruity aromas associated with the grade.
