Kimbo Daiginjo Shizukuzake Tobindori is the pinnacle expression from Kimpo Shuzo in Shimane, produced using the shizuku method in which sake drips under gravity from cloth bags without pressing, and the finest portion is collected in individual tobin bottles. This labor-intensive approach preserves the most delicate aromatic compounds and yields a sake of exceptional clarity and finesse. The daiginjo-grade polishing beyond 50% remaining further ensures an elevated and refined character.
