Yamada Nishiki from the Ikoma area of Nara goes into this junmai daiginjo, pressed drop by drop using the fukurozuri drip method and polished to 50% to maximize ginjo aroma. Underground spring water from the Ikoma foothills — long regarded as a famous water source — is used throughout. The resulting sake is described as aromatic and refined, with a clean dry profile.
