Hakutsuru Choutokusen Junmai Daiginjo Genshu Hakutsurunishiki is an undiluted (genshu) junmai daiginjo brewed with Hakutsuru Nishiki, a proprietary rice variety the brewery developed over more than ten years as a cross between Yamadaho and Wataribune. Founded in 1743 in Nada, Hyogo, Hakutsuru uses underground water from the Rokko mountain range, which is low in iron and rich in minerals suited to vigorous fermentation. The genshu format delivers the sake at full, concentrated brewing strength.
