Daiginjo Tamahagane Tobingakoi is a top-tier daiginjo from the Tamahagane brand by Hikami Seishu (founded 1712) in Okuizumo, Shimane, made with 100% Yamadanishiki polished to 35% and collected in the prized tobin (18-liter jar) method. Tobin collection captures the best free-run sake from hanging-bag pressing, concentrating the most delicate aromas and flavors, and Tamahagane has earned five consecutive gold medals at Japan's National New Sake Appraisal with this technique.
