Daiginjo Odanobunaga is crafted by Nihon-izumi Brewery in Gifu, using Yamada Nishiki polished to an exceptional 35%, with water drawn from 100 meters underground via the Nagara River aquifer. Fermented slowly at low temperature in the brewery's subterranean cellar, it presents a refined ginjo aroma and a sharp, dry finish with a sake meter value of +3.
