Gouriki rice polished to 75% is fermented and bottled as a nigori (cloudy) Junmai from Goto Shuzoten's Benten Musume label in Tottori. Fine lees remain in suspension, adding creamy texture and extra umami to the assertive Gouriki rice character typical of the label.
