Tamasakae is a junmai ginjo from Tottori's Wakasa region, brewed using 100% contract-grown local Tamasakae rice polished to 55% with Kyokai No. 7 yeast. Fermented at low temperature and pressed by bag through wooden vats, it offers a soft texture with a gentle bitterness and clean finish, suited to service as warm sake.
