Polished to 45% and fermented to full attenuation, this junmai daiginjo from Tottori's Wakasa region shows a distinctly dry and acidic character unusual for the grade. Pressed by bag through wooden vats and brewed without blending, it is designed to be served hot, where warmth softens the acidity and draws out underlying sweetness.
