
Kagura is inspired by the traditional Hirado Kagura performing arts passed down in Nagasaki's Hirado region, brewed with Yamada Nishiki at 55% polish using Mori Shuzojo's all-kimoto approach and white koji. The white koji adds citric acidity not typical of sake, producing a fruity, citrus-forward profile with lemon and grapefruit notes alongside deep umami from the Yamada Nishiki.
