En tant que seule brasserie entièrement junmai de Toyama, Yoshinotomo applique des principes constants de brassage en riz pur à ses éditions nama, livrant un embouteillage frais et vivant qui met en valeur le caractère net du riz sans l'effet adoucissant de la pasteurisation.
