Sake no Hana, une variété de riz patrimoniale ressuscitée de l'ère Taisho par les propres agriculteurs de la Nakaoki Sake Brewery, est poli à 45 % pour ce genshu de Kawanishi, Yamagata. Le conditionnement en genshu non dilué préserve toute la concentration de saveur extraite de ce grain rare cultivé localement.
