La tradition brassicole antique de Nara constitue le cadre de ce mariage entre la fermentation yamahai à l'ancienne méthode et la variété patrimoniale de riz Omachi. Le résultat est un sake au caractère terreux profond de l'Omachi, en superposition à la complexité lactique naturelle du yamahai.
