Hatsugasumi Junmai est un sake pur de riz de Kubohonkeshuzo dans la préfecture de Nara, l'une des plus anciennes régions productrices de sake du Japon avec une histoire de brassage couvrant plus d'un millénaire. Les brasseurs de Nara favorisent traditionnellement les styles riches et corsés qui se marient bien avec la cuisine locale, et ce junmai suit ce caractère régional. Brassé sans ajout d'alcool distillé, le sake exprime la profondeur naturelle de l'umami dérivée de la fermentation du riz et du koji.
