A fresh, unpasteurized Junmai Daiginjo from Chikumanishiki Shuzo's Yoshidayajisuke heritage label, using Yamada Nishiki polished to 39% with pure mountain water from Nagano's Saku basin. Released as namazake to preserve its vibrant character, this expression from one of Nagano's oldest breweries (founded 1681) offers exceptional brightness and aromatic depth.
