Yamahai Daikarakuchi Honjozo is one of the driest expressions in the Haginotsuyu lineup, fermented using the yamahai method to amplify umami while pushing the SMV toward an assertively dry finish. Ginfubuki rice from Shiga underpins the brew's clean, structured character.
