Za is the brewery's flagship junmai, built on Yume Ikkon rice at 68% polishing with the stated goal of creating the ideal food sake. Rounded, softly sweet, with fine-grained acidity and pronounced rice umami, it performs equally well chilled or warmed alongside a broad range of dishes.
