「u」是温柔的「ゆ(柔)」。运用自然界乳酸菌力量的天然酿造法「山外造り」,酿制出酒精度13%的柔和无过滤生酒。使用酒坊周边产的米、自家培育的「金泽酵母」以及灵峰白山的「百年水」,不断探索葡萄柚般清爽酸味与多汁甜味的最佳平衡。无论和食还是西餐,均能完美搭配。
