平和锦酒造的主楼与酿酒仓均为创业时期的建筑,至今已有约160年历史,酿酒充分利用奥美浓的自然气候条件。由于是小型酒藏,酿造全程当然为纯手工完成,所用器具均为沿用已久的传统工具,不使用大型设备。每批次产量有限,正因如此,长年栖居于仓中的酵母与杜氏、藏人传承下来的酿造工艺,共同孕育出金泉与平和锦酒造独有的清酒风味。
