Description

Yamada Nishiki polished to 60% is brewed into this tokubetsu junmai genshu, which is undiluted and aged in Yoshino cedar barrels without carbon filtration. At approximately 18.5% ABV, the undiluted alcohol amplifies the cedar note and deepens the rich, concentrated rice umami.
