Yamada Nishiki, polished to 60%, is used in this ginjo from Osaka's Suminoe Shuzo, one of the oldest breweries in the prefecture with a history stretching back to the Edo period. The kura draws on underground water from the Izumi mountain range and emphasizes hand-crafted production methods.
