Takakiya Karakuchi Honjozo is a dry-profile honjozo from Hamashima Shuzo, made with a small addition of distilled alcohol that sharpens the sake's finish and reinforces its clean, crisp character. The brewery's Bungo-Ono location in Oita puts it within a landscape of clear mountain rivers, and the cold winters that favor clean fermentation align well with the karakuchi (dry) style.
