Takakiya Junmai Daiginjo Wakamizu is built around Wakamizu, a sake rice variety that Hamashima Shuzo's fifth-generation owners cultivate themselves on their Oita farmland and consider central to the brewery's identity. The name Wakamizu translates as 'young water,' evoking the fresh spring water of the Bungo-Ono mountains that supports fermentation at this all-handmade brewery. This seasonal release demonstrates how the union of house-grown rice and pristine local water produces a junmai daiginjo of regional distinctiveness.
