Description

奈良酒自室町时代便开始酿造,在战国时代迎来了全盛期。诞生于奈良菩提正觉寺的"菩提酛"技术,使安全的酒母制作成为可能,奈良的寺院酿酒因而奠定了现代酿酒的基本技术。菩提酛与酿酒被称为酿酒的原点,这也是正觉寺被誉为日本酒发祥之地的缘由。织田信长亦有赞美其品质之高的记载。随着各地酿酒多样化、山废与速酿的发展,这一传统技艺一度几乎被遗忘,但自1999年起,它作为日本酒的原点在发祥之地正觉寺得以复活。如今,这一传统与技艺通过"鹰加贺"系列,继续向世人传承"奈良之酒"的精髓。
