自室町时代流传下来的奈良酒在战国时代迎来了全盛期。奈良菩提正觉寺诞生的「菩提酛」技术使安全的酒母酿制成为可能,奈良的寺院酒造奠定了现代酿酒的基本技术。菩提酛与酿酒被称为酿酒的原点,正觉寺被誉为清酒发祥之地。据记载,织田信长也曾称赞其品质之高。随着各地酿酒的多样化,山廃与速酿的发展,这项传统技艺一度几乎被遗忘,1999年起在其发源地正觉寺得以复活,回归日本酒的原点。如今作为「鹰加贺」系列,将「奈良之酒」的传统与技术传承给世人。
