Taikan's premium junmai daiginjo is drawn by the fukuro-shizuku (bag-drip) method and bottled without filtration or dilution as a muroka nama genshu. Brewed with Yamadanishiki polished to daiginjo grade, it shows white peach and melon-like ginjo aromas with a refined sweetness and a clean, lively finish.

The origin of the name "Taikan" is named by "Taikan", which was bitten by a commissioned military person celebrating the future. Sake and crown that were so named to match the celebration. The founding has a history of more than 120 years in 1873. The warehouse is located in the Southern Alps, and in a clean environment. Flexible sensitivity due to youth, polished technique, and teamwork. The teachings of Shingen Takeda, who aimed to build a country in the sum of people, live here.
