Yamada Nishiki at 39% polishing is fermented to the end and then collected exclusively through the shizuku drip method, in which the moromi is bagged and sake drips freely without pressing, for this daiginjo from Kametaya Shuzoten in Matsumoto, Nagano. The hands-off pressing technique yields exceptional clarity and a refined aromatic profile.
