Junmai ginjo from the Hanzo Shuto (autumn) line, produced at Ota Daita Shuzo's Iga facility after a full summer of tank aging following fire-entry pasteurization. The maturation process yields a mellow, well-rounded sake with harmonized umami and acidity suited to the autumn table.
