Yamada Nishiki milled to 40% is the foundation of this junmai daiginjo from Shiogama's Saura brewery, the birthplace of Kyokai No. 12 yeast. The brewery's long mastery of high-grade brewing shows in a sake that earned a bronze award at the 2025 IWC SAKE competition.
