久世酒造是日本唯一一家从种植酿酒米到成品清酒全程一贯生产的酒藏。自1786年起,酒藏便在自家稻田中种植专属酿酒米(长成米),并以此酿造清酒。酿造用水则结合了自家地下水(硬水)与名泉"清水"的涌泉水(软水),水质独特讲究。
