Reihou rice at 70% polishing forms the base of this sake from Senryu Shuzo in Nagasaki, where spring water from the mineral-soft Kitamatsuura Peninsula has been the foundation of sake-making since the brewery's founding in 1688. The Reihou variety, common in Kyushu brewing, contributes a clean rice character at this everyday polish level.
