Kanjukumeginjoshu Kankobai Umeshu from Kankobai Shuzo in Mie Prefecture is a ripe plum (kanjuku ume) liqueur based on ginjo sake rather than the more common shochu or standard sake base. Using ginjo-grade sake as the foundation imparts greater elegance and fruity depth to the umeshu, complementing the concentrated sweetness of fully ripened plums.
