Description

Gohyakumangoku polished to 55% and yamahai (yamahai-shikomi) fermentation define this junmai ginjo named after the historical lord and lady of the Kaga clan. Subtle ginjo aromatics harmonize with full rice umami, producing a sake with a sake meter of 0 and 1.5 acidity, balanced for pairing with Kanazawa cuisine.
