Junmainigorishinshu

Kyo no Kagayaki is a sake rice variety developed jointly by the National Agriculture and Food Research Organization and Kyoto Prefecture, known for a light body with clean, solid umami. This junmai nigori uses the rice without a specified polishing ratio, making it a cloudy, textural expression of Kyoto's own sake-specific grain.
