使用京都诞生的新酵母「京之恋」。酿酒用米以清酒酿造适合米「祝」为主,用于京都产纯米酒的全量。解放酵母的活力,酿造出最佳的酒。四段式酿制与生酒特有的米香甜味、长期超低温发酵所带来的清爽香气,以及清新感完美融合。以无过滤方式酿制,根据装瓶时机,有时米的成分可能残留在瓶内。这是一款生酒,活跃酵母的生命力直接传递至舌尖。※这是与京都市产业技术研究所共同开发的新纯米酒。

松井酒造株式会社创立于享保十一年(1726年),酒藏坐落于东山三十六峰与鸭川之间,附近有京都御所、下鸭神社及比叡山等名胜环绕,自然环境得天独厚。因地下工程影响而长期停产后,酒藏于2009年复兴,多名酿酒师共同投入酿造。酒藏不追求强烈香气或干辣,而是最大限度呈现米的甜酸"米之旨味",以松尾大社日本酒大赛冠军的实力,酿制醇厚美味的佳酿。
