Brewed without added alcohol and with rice milled to at least 60 percent, this junmai ginjo delivers the moderate, clean aromatics associated with Shimane's San'in brewing tradition. The brewery draws on the clear water of the Hii River basin, historically linked to the iron sand and mythological tradition of the Izumo region, to produce a grounded, flavorful sake.
