Jokigen Yamahai Junmai Ginjo Yamajungin is a junmai ginjo from Kano Shuzo in Ishikawa Prefecture, brewed using the yamahai starter method as indicated by the abbreviated name combining yamahai, junmai, and ginjo. The combination of yamahai's rich lactic complexity with ginjo-level polish produces a sake with both depth and aromatic refinement characteristic of Ishikawa's Kaga brewing tradition.
