市野屋据传创业于庆应年间(1865年)。酒藏坚守明治时代建造的仓库,不依赖机械,从最重要的米洗、制曲、酒母到三段仕込,全程手工操作。大町市位于北阿尔卑斯山麓,酿造用水为海拔900米高处涌出的清澈泉水,泉源周边植被丰茂,天然过滤后形成的山泉水清澈甘甜。酒米则奢侈地选用大町市及长野县内栽培的宫岛锦、一本锦、山荣锦、白桦锦等减农药酒造好适米,精心手工酿制。
