Honjozo Namachozoshu Tennoyuzuru from Katsuragawa Shuzo is a cold-stored unpasteurized sake, aged under refrigeration to preserve freshness while developing gentle complexity. The namachozoshu style is pasteurized only once before bottling, retaining more of the fresh character of raw sake than standard twice-pasteurized expressions.
