Yutori, meaning relaxed ease or unhurried, is a namazume genshu futsushu from Houmeishuzou in Hyogo, bottled as an everyday table sake at natural alcohol strength with a single pasteurization at bottling. As a futsu-shu, or standard sake, it is produced with fewer regulatory restrictions on ingredients and polishing ratios, resulting in an accessible, unassuming drinking style. The namazume bottling preserves a fresher character than conventionally pasteurized table sake, and the undiluted genshu format gives it more body than typical diluted expressions.
