Junmai Ginjo Koikawa Dewa33 is brewed with Dewa33, a proprietary Yamagata sake rice variety developed as a cross between Yamada Nishiki and Miyama Nishiki, known for its delicate ginjo aroma profile. As a Junmai Ginjo, it is brewed without added alcohol, allowing the distinctive character of Dewa33 to express itself fully. Koikawa Shuzo's location in庄内 (Shonai), Yamagata gives access to the regional yeast and water that define this terroir-driven style.
