Tama Sakae rice is polished to 50% and fermented with the brewery's proprietary yeast for this junmai ginjo from Nakao Shuzo in Ibaraki, Osaka. The pure-rice formulation and 30-day fermentation bring out a mellow, dry taste with restrained aroma and a neat, precise finish.
