Yukiotoko, meaning 'Snow Yeti,' takes its name and image from a legendary creature of the snow country described in the 19th-century classic 'Hokuetsu Seppu' written by an ancestor of the Aoki family. Aoki Shuzo, founded in 1717 in Uonuma, Niigata Prefecture, one of the snowiest regions in Japan, positions Yukiotoko as a deliberately dry counterpoint to its signature Kakurei brand. The sake is built on the house's tradition of harnessing the deep snows of Echigo to produce crisp, clean fermentation.
