Yoikigen
Yoikigen, produced by Yoikigen Co., Ltd. in Kurashiki, Okayama, was established in 1907 under the original trademark Furoroku Masamune before adopting its current name under the second generation. The brewery draws water from approximately 30 meters underground via the Takahashi River aquifer and uses Okayama-grown rice varieties Omachi and Akebono to build a slightly dry, rice-forward character through low-temperature fermentation. In 2017, the brewery discontinued regular table sake entirely to refocus exclusively on premium categories, renovating facilities and installing precise climate control for fermentation.
