Soganohomare is brewed by Ishii Jozo, founded in 1870 in the Soga area of Kanagawa Prefecture, a region historically associated with the legendary Soga brothers. The brewery's most distinctive technique is a traditional four-step brewing process (shidan-jikomi) in which glutinous rice is added as a fourth stage beyond the standard three steps, producing a rich, full-bodied character. Brewing water drawn from 50 meters underground in the Tanzawa mountain system, a slightly hard water high in potassium and magnesium, drives vigorous fermentation and contributes to the sake's firm structure.
