Description

Honjozo genshu made from Akebono rice polished to 70%, bottled undiluted for a fuller, more concentrated expression of the Soganohomare style. Akebono is a Kyushu-origin rice variety valued for its mild character in the mash. The four-stage mochi-rice brewing method and Tanzawa hard water give this genshu a dense, slightly sweet umami with a firm, dry edge.
