Founded in 1855 at the foot of Mt. Sefuri in Itoshima, Fukuoka, Shiraito Sake Brewery has brewed under the quiet motto of NormCore since its earliest days, valuing enduring tradition over trend. The brewery is distinguished by its revival of the Edo-period Haneki-shibori hand-lever pressing method, which slowly extracts sake without mechanical force, and uses Itoshima-grown Yamada Nishiki to produce its flagship Tanaka Rokujugo junmai.
